The kiridashi is an all-purpose knife that is used in most households. It has a cutting edge angle of around 25 degrees to the back, and can be used left-handed, right-handed, or double-edged. To begin with, the cutout is shaped to keep the blade length down, with no linkage between the blade length and overall length.
I have one simple cut-out knife, but I am going to buy a stylish French cut-out knife, DOUK-DOUK, as a memorial. I’ll only use it for sharpening pencils anyway. I am attracted to tools by their beauty (the beauty that naturally appears as a result of pursuing a form and structure that is free of unnecessary decoration), and I am tempted to collect them.
